Easily the most high quality tea we have in the entire store now, this tea is unlike any other. Out of the Boseong Unurim estate in Korea, we present to you a single-estate yellow tea.
Yellow tea, also called Hwangcha, is a traditional Chinese variety of tea that very few Masters remember the proper preparations for. It involves wrapping early-spring tea buds in a specialized cloth and steaming them inside of it for several days, allowing them to absorb the steam and soak it into the leaf itself, also allowing for a subtle fermenting and partial oxidation. They are then fried like a traditional Chinese green tea, stopping the oxidation, then slow-dried over charcoal.
The result is a perfectly unique flavor that comes across as a cross between every variety of tea. This Korean Sejak yellow (a second-flush) features a flavor base similar to a white tea is present with an earthy tone similar to a sheng pu-erh, those interesting fruity notes of a first-flush Darjeeling, the grassy notes of a green, and the rich, vegetal lack of astringency of a oolong. This tea is perfect for anyone who is looking for an interesting, unique tea and has the budget to splurge on a high-quality premium leaf.
- Use 4g (≈1 tbsp) of leaf per ½ liter (≈17 oz) of water.
- Use 80°C/212°F water
- Steep for 2 minutes, strain leaves, and enjoy!
- Too strong? Take off a minute, or use 5g of leaf instead!
- Too light? Kick it up another minute, or use 10g of leaf instead!
